Qualifications & Competencies
- A bachelor's degree in hospitality, business, or a related field, or a culinary school degree.
- At least four years of experience in the food industry, including roles managing staff.
- Familiarity with food service regulations.
- Excellent communication and organizational skills.
- Attention to detail.
Responsibilities
- Manages all the hotel F&B Outlets and Banquets.
- Responsible for short and long-term planning of all outlets including Restaurant, Bar, Room service.
- Responsible for the selection, training and development of the team members within the department.
- Control of F&B expenses and ensure there is no wastage or abuse on hotel property and equipment.
- Full understanding of team engagement with guests.
- Develop and recommend the budget, marketing plans and objectives.
- Participate with the culinary team, in the creation of attractive and merchandising menus designed to attract a predetermined customer market.
- Forecast, implement, monitor, control and report on the various outlet budgets and their components (labor costs, food costs, beverage costs, supplies, equipment, etc.) to maximize revenue and minimize expenses while ensuring adequate supplies and staff are on hand to provide top quality customer service.
- Create, recommend and implement promotions, displays, buffet presentations and ideas to capture in house guests.
- Monitor and control the maintenance/sanitation of the various outlet areas and equipment to protect the assets, comply with policies and procedures and ensure quality service.
- Implement all outlet SOP’s and ensure full compliance and training is aligned with the five-star luxury standard.
- Manage and control all expenses, including payroll, staffing, food and beverage costs, linens, wares and any consumable related to F&B department.
- Participate in budget process for F&B area and ensure budget goals are met.
- Ensures the confidentiality of all private records, documents and information.
- Communicate all necessary information effectively to staff and hotel management team.
- Detail oriented and ensure all process of effectiveness are being followed.
- Ensure that all monthly inventories are completed, reviewed and submitted.
- Investigate any discrepancies in inventories and provide explanations.
- Assure all equipment is operational and supplies are at par levels.
- Ensure all hygiene audits are met within the target set by the company exigencies.
Requirements
Bachelor’s degree in hospitality and /or Hotel Management, plus 5 years minimum experience in a management role in a 5* Deluxe property.
